Of Pots and Pans Basic in the Kitchen

In a fully equipped kitchen there is a whole range of pots and pans for different types of cooking but for usual household use, the basics are:
- Saucepan – For melting, boiling, heating prepared sauces. For all purpose cooking of small quantities.
- Frying pan – For frying and sautéing. For high heat cooking.
- Sauté pan/ skillet (low sauce pan) – For sauté cooking.
- Sauce pot/ casserole/ stew pot (small stock pot) – For simmering food in a liquid/sauce like soups, pastas and stewed beef. For simmering of large quantities.
- Steamer inserts (to use with a pan of the same diameter) – The pan contains water which one brings to a boil to generate steam. The steamer is then placed above and covered by a lid. The steam goes through the holes and the steam will cook the food placed there. It is also possible to cook two different kinds of food at the same time; one with the water in the pan at the bottom, the other one with the steam.
The combination of pan and pots for an ideal cooking range are:
- 4 sauce pans (14, 16, 18 and 20 cm)
- 1 full steel frying pan for high heat cooking
- 1 non- stick frying pan for delicate foods
- 1 pressure cooker for quick cooking
- 1 steamer insert for smooth cooking
- 1 sauce pot (24 cm.) for soups, pastas, etc.
- 1 stockpot for large recipes
